Tim Woodward and Trustee Sebastian Green have been visiting various manufacturers in South Wales, Dorset and County Durham to learn more about retort cooking. If we use a retort cooker then we can produce a casserole in a plastic pouch that is ambient. The army has started using this method as it not only requires no chilling or refrigeration but is also really light and strong.
